Spinach fritters (palak pakoda)

This is fast and easy Indian vegan recipe. Spinach fritters can be consumed as a snack and cooked for breakfast as well. In Hindi they are named Palak Pakoda.


  • 1/2 cup of gram flour;
  • 1.5 cups of spinach – chopped;
  • 1 onion – chopped – to taste;
  • 1 green chili – chopped – to taste;
  • 1 tsp of ginger-garlic paste, or a little bit of chopped ginger and garlic;
  • 1/2 tsp of turmeric powder;
  • 1/4 tsp of red chili powder – to taste;
  • 1/4 tsp of black pepper;
  • 1/2 tsp of cumin seeds – to taste;
  • Salt – to taste;
  • Oil (required amount for deep frying according to the size of your pan);
  • 1/2 cup of room temperature water


  • Mix gram flour with all the spices and salt;
  • Add ginger-garlic paste, onion, green chili and spinach to it;
  • Add water and mix the dough very well. It shouldn’t be too liquid – if it happened, add more of gram flour. It shouldn’t be too thick as well, otherwise your fritters will be hard – if it happened, add more water. Don’t worry about the fritters shape – the shape isn’t important in this recipe;
  • Preheat the oil for deep frying. It should be already hot when you start cooking your first fritter;
  • Put a few fritters to fry at once (that many that fit in the pan without sticking to each other);
  • Deep fry your fritters on low flame so that they will get cooked properly from inside. If to cook on high flame, they might get burned from outside but be under-cooked from inside;
  • When your fritters are ready, remove them on paper kitchen towel so that it would soak excess oil;
  • Fry other fritters the same way;
  • Serve them with your favorite sauces. You can also try cooking green chutney – Indian coriander and mint sauce to eat together with your fritters.
