White Sauce Pasta Indian Style

I have already shared the recipe of Red Sauce Pasta Indian Style. Today I will tell you a recipe of White Sauce Pasta, which is no less popular in India these days, but is very different from Red Sauce Pasta. The main difference is that it is cooked usually not spicy but creamy. Such pasta in India is often consumed by foreigners who have been in the country for a long time. It is soled in quite many modern Indian cafes and restaurants.

Ingredients:

  • Pasta – 200 g;
  • 3 tbsp of cooking oil;
  • Salt to taste;
  • 1 tsp of garlic – chopped;
  • 1 onion – sliced;
  • 1 small carrot – sliced*;
  • 1/2 bell of capsicum – cut into small cubes*;
  • Corn (frozen) – amount to taste*;
  • 1 tsp of black pepper;
  • 4 tbsp of butter;
  • 4 tbsp of refined wheat flour;
  • 1 glass/ 2 cups of milk;
  • Red pepper (paprika or chili flakes) – to taste;
  • Oregano or other herbs – to taste;
  • Cheese – amount to taste – grated.

*You can use other vegetables of your choice or mushrooms.

Recipe:

  • Cook pasta in salted water with 1 tbsp of oil;
  • Drain the water from pasta;
  • Heat a pan with 2 tbsp of oil and add garlic there, fry for 30 seconds;
  • Add onions and fry it for 2 minutes, until it becomes half-cooked;
  • Add carrots, bell peppers, corn and fry vegetables for 4 minutes;
  • Add salt, 1/2 tsp of black pepper, mix vegetables well and remove them from the stove;

Preparation of creamy sauce:

  • Melt the butter in another pan and add flour to it, mix it well;
  • Cook the flour with the butter on low flame for 2 minutes, stirring constantly (make sure that the flour does not burn, only becomes yellow);
  • Slowly add milk while continuing to stir the flour with the butter;
  • Cook for 3-4 minutes continuing mixing so that there will be no lumps;
  • The sauce should not be too thick – if it happened, add some milk or water to it and mix well;
  • Add salt, 1/2 tsp of black pepper, a little bit of red pepper and herbs to taste to the sauce, cook it for another 3-4 minutes, stirring constantly;
  • Add cooked vegetables and pasta to the sauce, mix well and cook for another 3-4 minutes;
  • Add cheese and mix everything well to melt the cheese;
  • Serve hot! When serving, you can sprinkle the pasta with a small amount of herbs and/ or chili flakes, grated cheese or garnish it with fresh greenery.
