Veg Mancurian is a popular vegan Indo-Chinese dish in India. It’s perfect as a snack or as a side dish to serve with noodles or rice.

Ingredients:

  • 1 cup of chopped cabbage;
  • 1/2 cup of chopped/ grated carrot;
  • 1 cup of chopped onions;
  • 1/4 cup of chopped capsicum;
  • 3-4 cloves of chopped garlic;
  • 2 inch (4 cm) piece of chopped ginger;
  • 2 tbsp of cornflour;
  • 1/4 cup of refined wheat flour;
  • 2-3 tbsp of soy sauce;
  • 1 tsp of vinegar;
  • 1 tsp of red chili sauce/ 1 tbsp of ketchup;
  • Salt – to taste;
  • Black pepper – to taste;
  • Cooking oil – the amount for deep frying;
  • 1/2 cup of spring onions – to taste;
  • 1 green chili – to taste

Recipe:

Preparation of manchurian balls:

  • Mix chopped cabbage, carrots, capsicum, half of the onions and some of the spring onions (if you add them) in the bowl. Squeeze the water from the vegetables so that it would be easier to form the balls;
  • Add 1/3 of all the chopped ginger and garlic, a little bit of salt, black pepper to taste, half of the soy sauce. Do not add too much of salt because soy sauce contains it as well;
  • Add corn flour and refined wheat flour to the vegetables;
  • Mix the vegetables well. If the mix looks wet, do add more of the flour;
  • Form the medium sized balls;
  • Heat oil for deep frying and fry the balls on medium flame until they turn golden (do not cook them on high flame otherwise they can turn out to be under-cooked from the inside);
  • Remove the balls from the oil on paper kitchen towel, so that it would soak the excess oil;
  • Leave the balls aside and take another pan to cook gravy for your manchurian;

Preparation of the gravy:

  • Put 2 tbsp of oil to a pan and heat it;
  • Add the remaining garlic, ginger and chopped green chili (if you add them) and fry it for 30 seconds;
  • Add the remaining onions and spring onions (if you add them) and fry the vegetables until they turn golden;
  • Add the remaining of soy sauce, vinegar, red chili sauce/ ketchup, a little bit of salt and black pepper, cook for 1-2 minutes;
  • Add the manchurian balls to the gravy and gently mix them. Cook them for 1-2 minutes;
  • Veg Manchurian dry dish is ready! You can serve it with a little bit of spring onions/ other greenery on the top.
