Stuffed eggplant

A simple, quick and healthy vegetarian/ vegan recipe!


  • 1 large eggplant
  • 1 onion, chopped
  • 1 tomato, chopped
  • 1 clove of garlic, chopped
  • 100 g cheese, grated – optional
  • Salt and spices to taste
  • 2 tbsp of cooking oil

  • Cut the eggplant in halves and take out its insides with a spoon (do not throw away the insides!);
  • Preheat oven to 180 degrees Celsius and put the eggplant halves to bake there for 10 minutes (until it’s half ready);
  • Fry onions and garlic in a pan until they turn golden brown;
  • Cut the insides of the eggplant in small cubes;
  • Add the insides of the eggplant, chopped tomato, salt and spices to fried onions and garlic;
  • Cook vegetables until they are half ready, stirring occasionally;
  • Remove the eggplant halves from the oven, fill them with the fried vegetables and put back to the oven;
  • Bake stuffed eggplant for 10-15 minutes (you can check eggplant cover for readiness with a toothpick);
  • Put grated cheese on the top of stuffed eggplant and bake for another 3-5 minutes (if you are a vegan, you can skip this point);
  • Your stuffed eggplant is ready!
