Spinach with cottage cheese (Palak Paneer)

This is a healthy and quite easy in cooking Indian main course dish. Hindi name of this recipe is Palak Paneer, where palak is spinach and paneer is cottage cheese. If you are a vegan, you can cook this recipe by using tofu instead of cheese.

Ingredients:

  • 500 g of spinach leaves;
  • 200 g of cottage cheese – cut in medium or big cubes;
  • 2 onions, finely chopped;
  • 2 tomatoes, chopped;
  • 3 cloves of garlic, chopped;
  • 1 green chili – to taste;
  • 1 inch/ 2 cm piece of ginger;
  • 1/2 tsp of turmeric powder;
  • 1/4 tsp of red chili powder – to taste;
  • 1/4 tsp of black pepper;
  • 1/2 tsp of garam masala – to taste;
  • Salt – to taste;
  • 2-3 tbsp of oil;
  • 3 cups of water;
  • 3 tbsp of cream – to taste;
  • 1 tbsp of lemon juice – to taste

Recipe:

  • Put 2,5 cups of water for boiling with some salt, then add spinach leaves to it and boil them for 2-3 minutes;
  • Remove the spinach leaves to a cold water, let them cool;
  • Add the spinach leaves to a blender with tomatoes, 2 cloves of garlic, ginger and green chili. Blend it properly to the consistency of puree;
  • Heat a pan with oil, add onions, cook them until they turn golden-brown;
  • Then add the remaining chopped garlic and cook for 30 seconds;
  • Add made earlier spinach puree and 1/2 cup of water, mix well and cover for 10 minutes (but keep mixing occasionally);
  • Add all the spices and salt, cook for a minute;
  • Add cream and cottage cheese, mix well and cook for another 4-5 minutes;
  • Switch off the flame and add lemon juice to taste. Bon Appetit!
