South Indian vegan recipe

Ingredients:
- Oil – 2 tbsp;
- Urad dal (split lentils) – 1 tbsp;
- 1 dried red chili (optional);
- 1 onion – chopped;
- Ginger – 1 inch (2 cm) piece – chopped;
- Turmeric powder – 1/4 tsp;
- 2 tomatoes – chopped;
- Coconut powder/ fresh grated coconut – 1/2 cup;
- Salt – to taste;
- Black pepper – to taste
Recipe:
- Heat a pan with oil;
- Cook dal and red chili for a minute;
- Add onions and ginger and cook until they turn golden-brown;
- Add turmeric powder, fry for 30 seconds;
- Add tomatoes, cook until they are soft;
- Add coconuts, mix well;
- Wait until the mixture cools down;
- Blend it smooth in a blender.
Tadka (tempering) – optional:
- Heat 1 tbsp of oil, add 1 tbsp of mustard seeds to it and a few curry leaves. Fry for a minute and add the mixture on the top of your chutney.
